The winemaking history of Christoph’s family can be traced back to the year 1640. He has chosen an uncompromising path. The bedrock of the “Hollenburger conglomerate” is limestone-based and allow to produce structured, attenuated wines with a low alcohol content. To create exceptional Grüner Veltliner he employs the traditional methods - winemaking as well as cultivating biodynamic, certified Demeter.
The Hollenburger Grüner Veltliner expresses through virtue and liveliness, using only wild yeasts and grapes from our biodynamic vineyards. A wine given to us by nature. Two different cellars, but one way: a serious natural white wine. The base wine is a cuvée of different vintages. Spontaneously fermented in used oak barrels without any additions. Nature from the roots into the glass.
