‘Some of my favourite wines’ – Massimo Bottura on Austrian Wine

Massimo Bottura, who has topped the prestigious list ‘The World's 50 Best Restaurants’ not once but twice, paid a special visit to Austria in mid-June: He presented a seven-course meal for the victorious winegrowers of SALON Österreich Wein 2019, the nation’s most demanding wine competition. In this, he clearly demonstrated his enthusiasm for the work of the Austrian growers.

Twenty Years on the Wine List

At his Osteria Francescana in Modena, Bottura not only serves new and inventive interpretations of Italian culinary classics, but for two decades has featured the wines of Austria. These fit in perfectly with his culinary style, according to the star chef. He also cites the great potential for maturing that these wines exhibit, as he has repeatedly proved, tasting bottles that have been cellared for twenty years: ‘I love when they are very aged and very complex, mature. Wow!’

Top Chef Meets Top Wines

When asked what brought him to Vienna to cook for Austria’s winegrowers, Bottura’s answer was quite clear: ‘I enjoy their products so much! Austrian wines are some of my favourite wines.’ He also stated that he regularly discovers something new and outstanding when tasting Austrian wines. The wines of the seventeen SALON category-victors and the ten SALON-Select designees – determined annually in a marathon blind tasting by an independent jury – are outstanding as well. For more than three decades, the SALON Österreich Wein has been considered the national championship of Austrian wine, and its verdict enjoys the highest degree of credibility among wine producers, merchants and consumers. At the gala dinner in the Palais Coburg, the award-winning growers were able to enjoy the culinary art of the man from Italy. In a brilliant sequence of courses, Massimo Bottura presented some of his legendary signature dishes, such as ‘The Crunchy Part of the Lasagna’. This gustatory extravaganza was accompanied and rounded out by nothing other than the excellent wines of Austria.
